From Pre-Diabetic to Powerful: Client Spotlight Jenn

Meet one of our amazing clients, a homeschool mom of five daughters, part-time sourdough baker, and full-time family manager who decided four years ago to take charge of her health. Despite her nonstop schedule—swim meets, homeschooling, and baking for a local farmer’s market—she’s lost 28 pounds, over 19 inches, and gained a whole new perspective on what “dieting” can look like. With the support of Coach Kristi and the Stay Fit Mom community, she’s proving that no matter how busy life gets, it’s possible to fuel your body well, make room for sourdough, and thrive in every season.
SFM: Tell us a little bit about your story. Work? family?
Jenn: I’m married to my husband, John, and we have a big, busy family! I have three grown stepsons and five daughters at home, ages 11 to 17. My girls are homeschooled and are year-round athletes, mostly swimming and running, which keeps me on the go a lot! I’m also a sourdough baker. I bake once or twice a week for our local farmer’s market and for my regular customers.

SFM: How did you find Stay Fit Mom and what made you decide to take the leap?
Jenn: About four years ago, I began a journey to improve my health. After having my daughters, I struggled with my weight and was diagnosed as pre-diabetic, with a strong family history of diabetes, that was a big wake-up call. I knew I wanted to be strong and healthy for both my present and future.
I started by cutting back on sugar and processed foods and was able to reverse the pre-diabetes, which was a nice win. But despite developing lots of healthy habits like eating healthy foods, walking, strength training, and drinking plenty of water—my weight continued to fluctuate.
While searching for meal prep ideas, I came across Stay Fit Mom and began following them on social media. I loved their recipes, but what really stood out was how personalized their coaching seemed. I had worked with other online coaches before, but it never felt individualized to me. With SFM, it felt different, and that’s what ultimately made me decide to take the leap and give it a try.

SFM: Your transformation is incredible! Tell us how much weight/inches you’ve lost.
Jenn: Since April 1st, I have lost 28 pounds so far and over 19 inches!

SFM: You are a super busy homeschool mom with kids in all sorts of activities and you run a pop up bakery! How are you able to fit in Macro counting with your lifestyle? Have you had to make any major changes?
Jenn: As a busy homeschool mom constantly on the go with my girls’ activities, traveling out of town to swim meets, and baking several days a week for customers, macro counting might seem impossible, but pre-planning has made it manageable. In the beginning, I found it especially helpful to pre-log my meals in MyFitnessPal so I had a plan for the day. I still do this often, especially on busy days.
I’m also okay with eating the same meals a few days in a row, so I rely heavily on meal prep, which is why I love the SFM meal prep bowl recipes, because they are quick, macro-friendly, and easy to grab. We keep cooked proteins like chicken breast, ground beef, and shredded beef in the fridge or freezer, along with hard-boiled eggs, fresh fruits, and a variety of cut veggies. This not only keeps my athletic daughters well fueled (seriously they eat ALL THE TIME), but it also makes it easy for me to stay on track.
Salads are one of my go-to dinners, especially on days I don’t pre-log my food. They’re super versatile and don’t have to be boring! I can quickly adjust my macros by adding more meat for protein, an egg or Parmesan cheese for fats, or extra veggies or a slice of sourdough bread on the side for carbs.
Having macro-friendly grab-and-go snacks like nuts, beef sticks, or jerky also helps, especially when we’re traveling. Ultimately, planning ahead and keeping things pretty simple has been the key to consistently hitting my macros in my busy, constantly changing schedule.

SFM: How has learning to macro count shifted your thinking about “dieting?”
Jenn: When I hear the word “dieting”, I think of something very restrictive… cutting out foods, feeling deprived, or focusing on what I can’t have. In our home, we talk a lot about food as fuel, especially with five daughters who swim and run competitively, so fueling well matters.
For me, macro counting hasn’t been restrictive. It’s actually been freeing. I look at it as a clear roadmap to make sure I’m getting enough of what my body needs (protein, carbs, fats) without the guesswork. With macro counting I can have a s’more when camping or sourdough bread with a meal and not feel like it’s totally going to throw me off track.

Besides shedding pounds and inches, what are some Non-Scale Victories that you’ve experienced?
Jenn: Some of my non-scale victories would include things like improved sleep, better energy and my clothes starting to fit better!
What’s your most used, favorite SFM recipe?
Jenn: This summer my go to has been the Lemon Berry Poppyseed Pancake Bowl (piled high with additional berries)! And a close second would be the Mini Deep Dish Margherita Pizza! Oh and the oatmeal chocolate chip cookies… they are a favorite in my family and with my customers on my bake days!

SFM: Tell us about your experience working with Coach Kristi specifically.
Jenn: Working with Coach Kristi has been such a positive experience! She’s incredibly encouraging and supportive during my weekly check-ins, and she always addresses my concerns in a way that makes me feel seen and not alone on this journey. I also really appreciate that she’s a fellow homeschool mom who can relate to that part of my life. And while it’s not specific to Kristi, I LOVE the daily tracker SFM uses. It keeps me focused and accountable, but it’s simple and easy to use.
