Tell us a little bit about your story. Work? family? What’s a typical day in your life look like?

I’m a 49 year old mom of 3 kids. I have two kids in college at Missouri State and one at UMKC. My baby is a freshman in high school. I grew up on a farm in Southern Illinois and attended University of Missouri where I got my bachelor’s degree in nursing.  I met my husband while working at my first job out of college and he was in the Navy for 7 years where we lived in Florida and also Virginia prior to settling in Missouri in a small town outside of St.Louis. I work at a rural health clinic as a pediatric nurse practitioner 3 days per week. I am a level 2 CrossFit trainer and enjoy coaching classes at our local box. I also recently became a court appointed special advocate for foster children and recently started my first case.

How did you find Stay Fit Mom and what made you decide to take the leap?

I first saw Stay Fit Mom online with her meal prep recipes in the bowls. I was intrigued by the glass bowls. I bought a couple of cookbooks and couldn’t stop talking about them to everyone at the gym. I wasn’t new to macro counting but I also fell into under eating especially with fats. My mom passed away a couple of years ago and I struggled with some emotional eating/weight gain at that time. I’ve always been good with exercise but I couldn’t out-exercise my bad diet. I did the back to school challenge last year and started with a one on one coach right after.

Happy 1 YEAR MACROversary! How have you managed to balance living a full life while macro counting for a whole YEAR?

It’s crazy to think that I’ve been doing this a whole year!! It honestly hasn’t even been hard. I even had brain surgery in January and I was still able to stay on course. We’ve gone on some small vacations, weekends to visit the college kids and a family trip to Puerto Rico. Did I mention that I love champagne? I was able to make it all work.

We know that you’re a CrossFit coach. How has dialing in your nutrition changed your fitness overall?

I used to be a runner. I loved running ½ marathons. I found CrossFit about 8 years ago and I really loved the variability and the functional aspects of the weightlifting and exercises. Because I’m getting older, I never thought I would see PR’s again of things that I did years ago. However, the past month I have been making gains in the gym with PR’s the last few weeks.

What’s your most used, favorite SFM recipe?

Sund Dried tomato chicken orzo

Besides shedding pounds and inches, what are some Non-Scale Victories that you’ve experienced?

My clothes are fitting better for sure! I’ve also made some gains in the gym. I never realized how much my diet affected my sleep, but I’m sleeping so much better!

What makes the “hard” of macro counting worth it to you?

Honestly, I really don’t think it is hard. Am I perfect every day? NO. I am good about staying active and try to consistently dial it in when I can. Its so fun playing macro Tetris at the end of the day and get to eat some nuts/cheese/carb because you have calories left!

ell us about your experience working with Coach Stacy specifically.

I have loved working with a coach. Stacy has always been motivating and provided me with insight along the way. The accountability has been huge for me. The last several years I’ve been very up and down with my macros (good for several weeks and then go off the rails). Working with Stacy through the holidays, surgery, vacations, summer weekends have shown me that I can still do all the things!
