There is just something about fajitas that always taste so good! These Chicken Fajita Bowls can hit the spot while helping you hit your protein and macro goals. You can pack this yummy meal prep with a tortilla or another side of your choice and have the best meal ready to go. I never regret when I meal prep to have things ready for the week ahead and this is a meal that I always look forward to!

MEAL PREP SUPPLIES USED
4 cup glass bowls – Make sure the bowls you’re purchasing are oven safe. Check the label before purchasing, just to be sure!
Half size sheet pan – This is the perfect size for 5, 4 cup glass bowls. You can, of course, use a full size sheet pan but your bowls will slide around.
Meat Thermometer – I always like to use a meat thermometer to make sure my chicken has reached the internal temperature of 165º.
REHEATING INSTRUCTIONS
You can reheat these bowls in the microwave for 2-3 minutes. You can also preheat the oven to 350º and warm them back up for about 10 minutes.
FREEZING INSTRUCTIONS
Easily freeze these Chicken Fajita Bowls. Let them cool, cover with the lid, and store for up to a month in the freezer. Make sure you always let the bowls defrost some before putting them in the microwave so they don’t crack.

Chicken Fajita Bowls
Ingredients
- 25 ounces boneless skinless chicken breasts, or tenders
- 1/2 red bell pepper, sliced (100g)
- 1/2 orange bell pepper, sliced (100g)
- 1/2 yellow bell pepper, sliced (100g)
- 1/2 red onion, sliced (140g)
- 1 tablespoon olive oil
- 1 tablespoon taco seasoning
- salt & pepper
Instructions
- Preheat the oven to 425 degrees and arrange 5 oven safe containers on a cookie sheet.
- Divide the bell peppers and onions evenly among the 5 containers. Next add 5 ounces of chicken to each container. Drizzle 1 tablespoon of olive oil evenly amongst the 5 containers. Sprinkle with the taco seasoning, salt, and some pepper.
- Place into oven and bake for 25 minutes, or until the chicken has reached an internal temperature of 165 degrees.
- Let cool, cover, and store in the refrigerator for up to 5 days.
Notes
- Pack with your favorite side: tortilla, chips, salsa, sour cream, guacamole, etc.
