Breakfast Wonton Cups

Breakfast has always been the hardest thing for me. I don’t want to eat it, and I don’t want to prep it. This has mostly been an issue because I just never have enough breakfast ideas. I will eat the same thing for breakfast for two months before I get sick of it an need a new idea. I also don’t want to spend a lot of time cooking in the morning because I’m usually in a hurry to get out the door to work. These breakfast wonton cups are super easy to make and you can heat them up in the microwave for a quick breakfast!

Ingredients
- wonton wrappers
- ham steak
- egg whites
- Greek yogurt cream cheese, or 1/3 less fat cream cheese
- reduced fat shredded cheese

Step By Step Instructions
The first thing you need to do is spray your muffin pan with some non stick spray. Then line each cup with two wontons like I did here. You want to create a bowl for stuffing as much goodies in as you can.

Next put a dollop of Greek yogurt cream cheese in each one. This is one of my new favorite foods! It’s so yummy and it’s perfect for this recipe! I got this whipped version at Walmart but you can also find a similar one at Smith’s(Kroger). See my Instagram post here.

Next add your ham or whatever kind of meat you choose to use.

Then crack your egg white right on top. I made two for my husband that included the whole egg.


Top with shredded cheese and throw it in the oven for 15-20 minutes at 350 degrees F.
They should come out with nice golden brown edges and oozing melted cheese. Gosh I’m drooling.

I don’t mind my egg a little undercooked because I will just be zapping them in the microwave again anyway. I eat two breakfast wonton cups for breakfast and the macros on two are 17.3g protein, 12.3g carbs, and 6.1g fat.

Storing Instructions
Keep in the refrigerator an airtight container up to 5 days. Let cool completely and wrap individually to freeze up to 3 months.
Substitutions
- Meat- Use any meat you like! Bacon, sausage, or leftover steak. I have a few more varieties of wonton cups in Meal Prep Cookbook Volume 2.
- Use whole eggs or egg whites.
- Add any additional veggies like bell peppers, spinach, onions, or sun-dried tomatoes.

Ingredients
- 16 wonton wrappers, Look for gluten free wraps if GF
- 8 oz. ham steak
- 8 egg whites
- 16 tablespoons greek yogurt cream cheese
- 4 oz. reduced fat shredded cheese
Instructions
- Preheat oven to 350 degrees F.
- Spray your muffin pan with non-stick spray. Line each cup with 2 wonton wrappers like pictured.
- Fill each cup with 2 tablespoons of greek yogurt cream cheese, 1oz of ham, 1 egg white, and 1/2oz of shredded cheese.
- Bake for 15-20 minutes or until eggs are fully set.
- Let cool for a few minutes before lifting them out.



I made these today. I used sausage crumbles – 1 Tbls. I also mixed Greek yogurt and cream cheese together and used only 1 Tbls. I put fresh chives on top just before baking. These were EXCELLENT! Thanks for sharing your recipe!

Hi Lindsay! Using a whole egg will add about 5g of fat per serving (per wonton cup).

I’m new to macros. If I substitute Turkey sausage for the ham, will the protein macros stay the same if I use 8oz? How many grams of ham are you using?
Can you use Greek yogurt instead of cream cheese?
I wouldn’t sub it in. If you’re having trouble finding the Greek cream cheese I would sub in 1/3 less fat cream cheese.
I can’t find Greek Yogurt Cream Cheese anywhere near me! What can be used instead?
