Happy 2025! Wow, I can’t believe we’re at the start of another new year! Thanks for being here, reading our blog, and making my recipes!! Today, I have another delicious mac and cheese version for you! My Beefy Alfredo Mac is a delicious pasta dish with a creamy white Alfredo sauce, ground beef, and chopped broccoli making it a perfect all-in-one meal! It’s nice and filling and the perfect comfort food. Plus, it comes together fairly quickly, making it perfect for those busy weeknights when you need a quick meal that will have the whole family full and happy.

INGREDIENTS

  • Lean ground beef (90/10)
  • Pasta of choice
  • Pasta water (reserve after cooking pasta)
  • Broccoli
  • Onion
  • Low fat cottage cheese (I used 2 containers of Good Culture)
  • Butter
  • Parmigiano Reggiano (from the block)
  • Garlic cloves
  • Lemon juice
  • Salt
  • Pepper
  • Nutmeg

Recipe Tip

Throw your broccoli in the food processor to dice it up into small pieces.

Can I Just Use Pre-Shredded Parmesan Cheese?

You can, but the flavor of Parmigiano Reggiano is far superior, and really gives the sauce a better flavor in this dish. The good news is you can find it at most grocery stores and it will last a long time in your fridge.

How Do I Keep My Cottage Cheese From Curdling?

Make sure to warm up your cottage cheese before mixing in the hot pasta water a little bit at a time. Adding super hot pasta water to cold cottage cheese will cause it to curdle.

Storing & Reheating Instructions

This Beefy Alfredo Mac makes a lot, so if you have leftovers you can put the extras in an airtight container and store in the fridge for up to 5 days.

This recipe reheats so well! This makes a lot and is great for meal prep! Just reheat in the microwave 2-3 minutes!

Freezing Instructions

If needed, you can freeze the leftovers. Make sure to let it defrost well before reheating so you don’t have mushy pasta!

Beefy Alfredo Mac

Beefy Alfredo Mac is a hearty, creamy pasta dish combining tender pasta, rich Alfredo sauce, and seasoned ground beef for a comforting, flavorful meal.

Ingredients 

  • 1 1/2 pounds lean ground beef, 90/10
  • 16 ounces pasta of choice
  • 1 1/2 cups pasta water, reserve after cooking pasta
  • 3 cups broccoli, finely diced (255g)
  • 1/2 small onion, diced (50g)
  • 4 cups low fat cottage cheese, I used 2 containers of Good Culture(880g)
  • 2 tablespoons butter
  • 56 g freshly grated Parmigiano Reggiano, from the block
  • 3 garlic cloves
  • 1 teaspoon lemon juice
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • pinch of nutmeg

Instructions 

  • Cook pasta according to package directions (in salted water). Remember to save the pasta water when straining. Set both aside.
  • In a medium – large pot cook the ground beef over medium heat with some salt and pepper. Strain out grease when no longer pink.
  • Add the onions, broccoli, and butter. Cook over medium heat until the onions become translucent.
  • In a microwave safe mixing bowl, heat up your cottage cheese for 1-2 minutes. Using an emulsion blender(or traditional blender), blend the cottage cheese until smooth and creamy. Grate the garlic cloves and parmesan into the bowl. Slowly add 1 cup of the warm pasta water (about 1/4 cup at a time), the lemon juice, and spices. Mix well.
  • Add the cooked pasta noodles and cheese mixture into the pot and mix it all well. If it’s not creamy enough add a little extra pasta water. Serve and enjoy! This reheats the next day really well also.
