Ingredients 

  • 3 medium sweet potatoes, 775g
  • ½ teaspoon cinnamon
  • ½ teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon ground coriander
  • ½ teaspoon red pepper flakes
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon honey, 21g(hot or regular)
  • 20 g crumbled feta cheese
  • Fresh parsley, chopped

Instructions 

  • Preheat oven to 400 degrees.
  • Peel and slice sweet potatoes. I made mine about 1/4″ thick. Place on a sheet pan.
  • In a small bowl combine all the spices.
  • Drizzle the olive oil on the potatoes and season with the seasoning. Coat all pieces well and spread potatoes out in one even layer if possible.
  • Bake for 35 minutes, flipping potatoes half way through.
  • Remove from oven and drizzle on the honey and top with crumbled feta and parsley.
