Ingredients
- 3 medium sweet potatoes, 775g
- ½ teaspoon cinnamon
- ½ teaspoon smoked paprika
- ½ teaspoon ground cumin
- ½ teaspoon ground coriander
- ½ teaspoon red pepper flakes
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 2 tablespoons olive oil
- 1 tablespoon honey, 21g(hot or regular)
- 20 g crumbled feta cheese
- Fresh parsley, chopped
Instructions
- Preheat oven to 400 degrees.
- Peel and slice sweet potatoes. I made mine about 1/4″ thick. Place on a sheet pan.
- In a small bowl combine all the spices.
- Drizzle the olive oil on the potatoes and season with the seasoning. Coat all pieces well and spread potatoes out in one even layer if possible.
- Bake for 35 minutes, flipping potatoes half way through.
- Remove from oven and drizzle on the honey and top with crumbled feta and parsley.
