Honey Roasted Sweet Potato Rounds
These honey roasted sweet potato rounds are sliced thin, tossed in warm spices and olive oil, roasted until tender with crispy edges, then finished with a drizzle of honey, crumbled feta, and fresh parsley for the perfect sweet-savory bite.

sweet potatoes

Instructions
Preheat oven to 400 degrees.
Peel and slice sweet potatoes. I made mine about 1/4" thick. Place on a sheet pan.
In a small bowl combine all the spices.
Drizzle the olive oil on the potatoes and season with the seasoning. Coat all pieces well and spread potatoes out in one even layer if possible.
Bake for 35 minutes, flipping potatoes half way through.
Remove from oven and drizzle on the honey and top with crumbled feta and parsley.
