Green Bean Casseroles

November is already here and that means Thanksgiving is coming up soon! Today I’m sharing my Green Bean Casseroles, meal prep style! This is always a favorite side at Thanksgiving dinner, so I figured why not make it into meal prep that people can enjoy all week! They contain diced up turkey, green beans, a yummy homemade cream of mushroom sauce, and topped with crispy fried onions and some parmesan cheese. These delicious bowls are packed with almost 40 grams of protein, which is so awesome when you’re tracking your macros!

INGREDIENTS
- Cut green beans (canned)
- Turkey breast
- Butter
- Mushrooms
- All purpose flour
- Beef broth
- Light sour cream
- 2% milk
- Pepper
- Garlic powder
- Crispy fried onions
- Parmesan cheese

Turkey Breast
This is the turkey breast I like to use for this recipe. It’s pre-cooked which makes it super easy to dice up to use in recipes.
Can I Use Raw Turkey Breast?
Yes of course! If you want the macros to remain the same, you’ll just need to use about 31 oz of raw turkey breast meat. Make sure to cook to 165 degrees, which should take 35-40 minutes.

Can I Use canned Cream of Mushroom Soup?
Yes! My original recipe from Meal Prep Cookbook Volume 2 calls for 1 & 1/2 cans of cream of mushroom. If you have the time I suggest making your own roux because it really elevates this dish, but you don’t have to! If using canned, you’ll still need to combine the cream of mushroom with the sour cream and milk before pouring into the bowls.
Are the macros different if I use canned cream of mushroom soup vs. following the recipe?
Nope. The macros are so very similar I’m not even going to bother creating another entry in the apps. Easy!

SUPPLIES USED
- 4 Cup Glass Bowls – My favorite meal prep dishes. They are oven save and the perfect size for all of your meal prep needs!
- Half Sheet Pan – This half sheet pan is perfect so that your meal prep bowls don’t slide around and makes transferring your glass bowls to and from the oven so much easier!
STORING & REHEATING INSTRUCTIONS
Wait for your bowls to cool and then cover them with lids and place them in the fridge. They should stay good for up to 5 days.
These Green Bean Casseroles can easily be reheated right in the microwave for 2-3 minutes. If you prefer, reheat the oven and warm them back up for about 10 minutes.
FREEZING INSTRUCTIONS
You can easily freeze these Green Bean Casseroles if you need to. Let them cool, cover with the lid, and store for up to a month in the freezer. Make sure you always let the bowls defrost some before putting them in the microwave so they don’t crack.

Green Bean Casseroles

Ingredients
- 3 cans cut green beans, drained
- 25 ounces cooked turkey breast, diced
- 2 tablespoons butter
- 4 ounces mushrooms, diced
- 2 tablespoons all purpose flour
- 1 1/2 cups beef broth
- 1/3 cup light sour cream
- 3/4 cup 2% milk
- 1/2 tablespoon pepper
- 1 teaspoon garlic powder
- 1 cup crispy fried onions, 56g
- 2 ounces Parmesan cheese
Instructions
- Preheat the oven to 350 degrees and arrange 5 oven safe containers on a cookie sheet.
- Divide the green beans and turkey evenly amongst the 5 bowls.
- In a sauce pan over medium high heat melt the butter. Add the mushrooms and saute 5-7 minutes.
- Whisk in the flour (it will be clumpy) and slowly stir in the broth. Add about 1/4 cup of broth at a time and let it heat up before adding more.
- Simmer 5-10 minutes until it begins to reduce. Remove from heat and add the milk and sour cream. Return to heat and simmer another 5-10 minutes until nice and thick. Season with salt, pepper, and garlic powder.
- Stir in half the cheese and fried onions. Evenly distribute into the 5 containers, pouring over the turkey and green beans. Each cup gets about 1/2 cup.
- Mix bowls up well if you prefer. Cover with remaining cheese and onions. Bake for 35 minutes or until they start to bubble and the tops get crispy.
- Let cool before covering with lids and placing in the refrigerator. Reheat in the microwave 2-3 minutes.

I used Greek yogurt instead of sour cream-so that could be the cause for my mixture not thickening. A little salty but still very good!
