Today I’m bringing you a Stay Fit Mom fan favorite recipe, but this time in Meal Prep form. Our Dump Lasagna is one of those recipes that’s so quick and easy to throw together and is something the whole family will love! Now, you can enjoy it in the meal prep version and have your lunch ready for a whole week! This recipe has all the things and flavors you love about lasagna: pasta, marinara, cheeses, and some added veggies for good measure. This one is hearty and delicious and will keep you satisfied until dinner!

For this recipe, you’ll need 7 ounces pasta noodles of choice (This DeCecco Brand is my favorite but any slow dried pasta is superior to traditional
INGREDIENTS
- Pasta noodles of choice (uncooked)
- Lean ground beef (90/10)
- Onion
- Bell pepper,
- Zucchini
- Celery
- Carrots
- Garlic paste or minced garlic
- Parsley
- Oregano
- Crushed tomatoes
- Tomato sauce
- Low fat cottage cheese
- Skim mozzarella cheese
- Parmesan cheese
- Egg
- Salt & pepper

Can I Make This in One Large Casserole Dish?

MEAL PREP SUPPLIES USED
4 cup glass bowls -Make sure the bowls you’re purchasing are oven safe. They will say so on the label if purchasing in store.
Half size sheet pan – This is the perfect size for 5, 4 cup glass bowls. You can of course use a full size sheet pan but your bowls will slide around. The pan also makes it easier to transfer your 5 bowls in and out of the oven.
STORING INSTRUCTIONS
Let your Dump Lasagnas cool completely and then cover tightly with lids and store in the fridge for up to 5 days.
REHEATING INSTRUCTIONS
These bowls can easily be reheated right in the microwave for 2-3 minutes. If you prefer, reheat the oven and warm them back up for about 10 minutes.
FREEZING INSTRUCTIONS
Easily freeze these Dump Lasagna meal preps if you don’t want or need them all at once. Make sure to let them cool, cover with the lid, and store for up to a month in the freezer. Make sure you always let the bowls defrost for a few minutes before putting them in the microwave so they don’t crack.

Single Serve Dump Lasagna
Equipment
- 4 cup glass bowls (32 oz.)
Ingredients
- 7 ounces pasta noodles of choice, uncooked
- 1 pound lean ground beef, 90/10
- 1/2 small onion, diced (64g)
- 1/2 bell pepper, diced (100g)
- 1 zucchini, diced (100g)
- 2 celery stalks, diced (100g)
- 1 carrot, diced (100g)
- 1/2 tablespoon garlic paste or minced garlic
- 1 tablespoon parsley
- 1 tablespoon oregano
- 14.5 ounce can crushed tomatoes
- 8 ounce can tomato sauce
- 1 cup low fat cottage cheese, 220g
- 1 cup skim mozzarella cheese, 84g
- 1/4 cup parmesan cheese, 28g
- 1 large egg, whisked
- salt & pepper
Instructions
- Preheat the oven to 350 degrees and arrange oven safe containers on a cookie sheet. Spray lightly with cooking spray.
- Cook your pasta according to package directions in salted water. Set aside.
- Cook your beef over medium high heat until it is no longer pink. Turn off the heat and strain out the grease.
- Return heat to medium high and add in the vegetables, garlic, and spices. Cover and cook 3-5 minutes until the veggies are slightly tender.
- Stir in tomatoes, tomato sauce, cottage cheese, parmesan cheese, 1/2 cup mozzarella, pasta, and the egg.
- Evenly dump the lasagna into the containers and top with remaining cheese.
- Bake for 30 minutes.
- Let cool before covering with lids and placing in the refrigerator for up to 5 days.
- Reheat in the microwave for 2-3 minutes.

I made these for my husband and I this week. We both loved them! He can be a picky eater so I’m glad he liked them for meal prep. Thank you!
Love the recipe but MyFitnes Pal has a discrepancy I think.
When I import this recipe and take out 2 items and sub lean ground chicken it comes out to more calories when it shpuld come out to about 50 calories less, this tells me the calories on this recipe can’t be correct in mfp.
Hi Brandi! Glad you love the recipe! Thank you for the review! As for the nutrition info, there could be food items auto added to your imported recipe that are wrong. I always start from scratch and import each item/ingredient and check to make sure each ingredient I’ve added is correct. You might want to double check each item MFP added, or start again from scratch. Hope this helps!
