Chicken bakes of any kind are usually a big hit among those who like to meal prep. These Cajun Quinoa Chicken Bakes are another delicious meal to add to your list of meal prep recipes! Ingredients
- Boneless skinless chicken breast
- Smoked paprika
- Garlic powder
- Onion powder
- Oregano
- Thyme
- Pepper
- Salt
- Quinoa (I like the brand shown above from Costco!)
- Chicken broth
- Greek yogurt
- Mayo
- Bell peppers
- Red onion
- Cherry tomatoes
- Olive oil
- Minced garlic
- Lime

Supplies Used
- 4 cup glass bowls – Make sure the bowls you’re purchasing are oven safe. They will say so on the label if purchasing in store.
- Half size sheet pan – This is the perfect size for 5, 4 cup glass bowls. You can, of course, use a full size sheet pan but your bowls will slide around.
- Meat Thermometer – I always like using a meat thermometer to make sure the chicken is reaching an internal temperature of 165º.

REHEATING INSTRUCTIONS
Cajun Quinoa Chicken Bakes can reheated at any time! Just pop them in the microwave for 2-3 minutes when you’re ready to eat! You can also preheat the oven to 350º and warm them back up for about 10 minutes if you have more time on your hands.
FREEZING INSTRUCTIONS
If needed, you can freeze your extra Cajun Quinoa Chicken Bakes. When they are finished baking, let them cool, cover with the lid, and store for up to a month in the freezer. When you’re ready to eat them, be sure you let them sit out and defrost a little bit, so the bowls don’t crack when you reheat them!

Cajun Quinoa Chicken Bakes
Ingredients
- 25 ounces boneless, skinless chicken breast
- 2 teaspoons smoked paprika
- 1 teaspoons garlic powder
- 1 teaspoons onion powder
- 1 teaspoon oregano
- 1 teaspoon thyme
- 1/4 teaspoon pepper
- 1/2 teaspoon salt
- 15 tablespoons quinoa
- 1 1/4 cups chicken broth
- 5 tablespoons Greek yogurt
- 2.5 tablespoons mayo
- 2 bell peppers
- 1/4 small red onion, 40g
- 5 oz. cherry tomatoes
- 1/2 tablespoon olive oil
- 2 cloves minced garlic
- squeeze of lime
Instructions
- Preheat the oven to 350 degrees and arrange 5 oven safe containers on a cookie sheet.
- Dice up the chicken and season with all the spices. Set aside.
- To each bowl add 3 tablespoons quinoa, 1 tablespoon Greek yogurt, 1/2 tablespoon mayo, and 1/4 cup broth.
- Dice up the bell peppers, onion, and tomatoes.
- In a small pan over medium high heat, begin heating up the olive oil. Add the garlic and let simmer for about 30 seconds or until fragrant. Add the diced peppers, onions, and tomatoes. Season with salt and pepper, and a small pinch of each of the other spices. Cook until veggies are soft (About 5-7 minutes)
- Add 1/5 of the cooked veggies to each of the 5 bowls. Stir well and top each bowl with 5 ounces of the seasoned chicken.
- Bake for about 40 minutes, or until the quinoa is cooked.
- Let cool before covering with lids and placing in the refrigerator. Reheat in the microwave for 2-3 minutes and top with a small squeeze of lime before eating.

Is the chicken in this one raw? Just want to make sure. Some recipes I see say cooked and then I see these, so wanted to double check.
Hi Kayla, sorry for the delay, I’ve been on vacation with family. Yes, this recipe uses raw chicken. Unless I put cooked chicken breast in the ingredient list, it’s always raw. If you made it already I hope it turned out well. Take care.
Delicious and easy to throw together! I did find the step of sautéing the veggies a bit unnecessary but did it anyways. But would make again!
