Supplies Used
Slow Cooker – This is a staple in my house! This soup works great for you to put everything in the slow cooker in the morning and have dinner ready by evening.
Instant Pot – Hands down my most used and loved appliance! I linked the 6 quart, which is plenty big for most families, but I upgraded to the 8 quart 3 years ago and love it! It takes up a good portion of pantry space but worth it to me. I like making big batches of food (like this soup!) so we always have plenty of leftovers
How to Store & Meal Prep
- Refrigerator: Store in airtight containers for up to 5 days.
- Freezer: Freeze individual portions for up to 3 months.
- Meal Prep Tip: This soup thickens slightly as it sits, making it even better the next day.

If you want more cozy, protein-packed meals like this that are already macro-calculated and meal-prep friendly, this recipe fits right in with the Stay Fit Mom style of cooking. 💛

So delicious !! I roasted my own frozen corn , so it was a bit spicy and used a small jar of Mexican chilies because I could not find poblano pepper . Cooked in my Ninja foodie ..pressure cook setting . I used all regular chili powder .. making again ! Love it !!
