Instructions
Preheat the oven to 350°F. Arrange 5 oven-safe dishes on a sheet pan and lightly coat with cooking spray. I like to use 2-cup glass meal prep bowls.
To each bowl, add: 1/2 cup pancake mix, 3 tablespoons protein powder, 1 tablespoon Greek yogurt, 1/2 cup water and 1/4 teaspoon vanilla bean paste. Stir until smooth and well combined.
Divide the tablespoon of sprinkles evenly among the 5 bowls and gently stir them into the batter.
Bake for 30–35 minutes, or until the centers are set and cooked through.
Allow the pancake bowls to cool completely before covering and storing them in the refrigerator.
To serve, reheat in the microwave for 1–2 minutes and enjoy with your favorite pancake toppings.
Optional Frosted Birthday Cake Topping
For the funfetti cake-inspired version shown in the video and photos, refrigerate the pancake bowls for at least 30 minutes after baking. Spread 40g of Cool Whip over each bowl, then flip the bowl upside down and gently dip the whipped topping into a shallow bowl of sprinkles to coat the top.

Macros do not include optional Cool Whip and sprinkle topping.
