17ouncesrotisserie meat1 traditional size rotisserie chicken
1tablespoonolive oil
1cupchopped onions140g
10ounce can rotel original diced tomatoes & green chilies
32ouncechicken broth
salt & pepper to taste
Instructions
In a soup pan over medium heat, saute onions in olive oil. Cook until onions become translucent.
Add chicken broth, diced tomatoes, and pulled chicken.
Bring to a boil, reduce heat to low. Simmer for 20–30 minutes.
Enjoy with your favorite tortilla chips, strips, or a variety of other toppings.
