Warm up corn tortillas in the microwave so they’re soft. Place tortillas on a plate. Warm for 30 seconds, flip, then warm for another 20–30 seconds.
Spray a baking sheet with a small amount of cooking spray. Fill each tortilla with 75 grams of the chicken mixture. Fold and arrange on the baking sheet with the open side down.
Once all taquitos have been made, lightly spray them with cooking spray.
Bake for 20 minutes, or until the edges of the tortillas are turning a golden brown.
