Soft, cheesy sausage biscuits made with Greek yogurt and turkey sausage for a high-protein, meal prep-friendly breakfast. Perfect for busy mornings, these easy grab-and-go biscuits are macro-balanced, family-approved, and reheat beautifully all week long.
Cook sausage over medium high heat until no longer pink. Strain out any excess grease and set aside to cool.
Preheat the oven to 350 degrees and line a cookie sheet with parchment paper.
In a mixing bowl combine the Greek yogurt and eggs well.
In another bowl sift the flour, baking powder, garlic powder, and salt. Add to the Greek yogurt bowl and mix. It will be sticky.
Add the spinach, chives, cheese, and sausage. Gently mix in.
Scoop about 4 tablespoons (I use my large cookie scoop) of dough onto your baking sheet for each biscuit. press down on top of each biscuit with your fingers to flatten some.
Bake in the oven for 18 minutes, or air fry at 325 for 8-10 minutes.
Let cool and store in the refrigerator in an airtight container for up to 5 days. Reheat in the microwave 30 seconds.
Notes
Because this dough is stickier than traditional biscuit dough, don’t overwork it. Light mixing = softer, fluffier biscuits. If the dough feels too sticky to handle, lightly wet your hands or spray your scoop with cooking spray.
