This easy Cheeseburger Soup is a high-protein, family-friendly dinner made with lean ground beef, crispy bacon, potatoes, cauliflower, spinach, and plenty of veggies. 1poundsmall yellow potatoesdiced into ½-inch pieces

Instructions
In a large soup pot, over medium-high heat, cook the diced bacon until crisp. Remove the bacon from the pot and set aside. Drain the excess bacon grease.
Add the ground beef to the pot and season lightly with salt and pepper. Cook until browned and no longer pink, breaking it apart as it cooks. Drain any excess grease.
Return the pot to the heat and add the onion, carrots, celery, and garlic. Cook for about 5 minutes, or until the vegetables begin to soften.
Add the salt, pepper, garlic powder, onion powder, and paprika. Stir and cook for about 1 minute.
Sprinkle the flour over the beef and vegetables and stir until everything is evenly coated. Slowly pour in the chicken broth while stirring to prevent lumps.
Stir in the water, milk, frozen riced cauliflower, and diced potatoes. Bring the soup to a boil, then reduce the heat to low and simmer for about 30 minutes, or until the potatoes are fork-tender.
Stir the cooked bacon and chopped spinach into the soup. Cook for another 1–2 minutes, or until the spinach has wilted.
Serve warm with your favorite cheeseburger toppings, such as shredded cheddar cheese, diced tomatoes, onions, pickles, and a dollop of yellow mustard.
