Begin by preheating your oven to 350 degrees. Heat one T of Ghee in a skillet. When it's hot add in onion, garlic, and carrots. Cook until onions are translucent and carrots begin to soften. Next, add in your cooked sweet potato and cup of spinach. Be sure to mash the sweet potato in the skillet and continue to stir all ingredients together until spinach begins to wilt. In a bowl, combine ground pork, sage, salt and pepper. Add vegetables to the ground pork, and begin to make your patties. The sausage patties should be about 1 inch thick. Cook sausage patties in skillet for 2-4 min on each side until brown, then transfer to baking sheet and bake in over for 7 minutes. Enjoy!
