The 25 Best Toys For Active Kids

Growing up in this generation certainly has its advantages.  It’s hard to imagine life without the internet, social media, or google, but when my oldest son said, “iPad” as one of his first words, it really made me stop and think.

As parents we have the opportunity to show our children the value of staying active at a young age.  I’d be lying if I said my kids didn’t get their fair share of, “screen time,” but we balance that, “screen time” with a whole lot of movement and outlets for their energy.  The holidays can be the perfect time to provide kids with toys that they’ll not only love, but will promote healthy bodies and active minds.

This year I’ve taken on the role of a Children’s Leader for my bible study group.  We are in charge of the Precious Peaches; the 3 and 4 year olds.  They are absolutely adorable, but like my kids, they NEED healthy outlets and frequent variation in their activity levels.  Teaching these kids each week has really helped my own parenting.  We stick to a pretty good schedule at home, but I’ve become more aware of my own children’s needs for variety.  After breakfast we may watch TV, but it’s followed up with a large muscle activity like jumping on the trampoline or bike riding.  After that large muscle activity it’ll be time for a more quite activity like a matching game, books, or some Lego building .  These simple additions to our schedule have really helped with their overall behavior!

Run and Squat Workout

This run and squat workout can be done anywhere!  If you’re stuck at a hotel with only a treadmill, no problem!  If you don’t have a gym membership, no biggie!  Even if running’s not your thing, this is a great workout to get your heart rate up and changing.

This past week we did the big gender reveal with our families.  We had the doc put the labeled ultrasound in an envelope, had a friend get a balloon filled with confetti, and the boys popped the balloon.  While I would LOVE to have said I was as thrilled as my husband was at the idea of three boys, my initial reaction was actually…

That moment you find out baby number 3 is another boy!

BUT after sleeping on it, I woke up feeling incredibly grateful for the blessing of three boys!  Yes, our lives our crazy, messy, and we’ve got enough weapons to start a militia, but we wouldn’t trade it for the world.

Now let’s get after it with this week’s Stay Fit Mom Weekly Workout.  While my diet’s been a tad out of control these last few months, I have been able to keep up my workouts and I’m SO grateful for that.  Pregnant or not, this will get you sweating!

Weekly Workout:

  • Run 1 Mile.  Complete 10 Squats every minute.Stay Fit Mom posts new workouts each week!

Equipment Needed:

  • Keep track of your time using a watch or a Timer.  (We frequently use the MYWOD app and recommend it to our readers.  You can keep track of your workouts, they’ve got How To videos, and of course the app has great timers.)  Set your timer to go off every minute, so you know when to complete your squats.

Modification Options:

  • Be sure to modify this at home workout to your ability level.  If you want a challenge, you can always try 2 miles!  If you’re not giving yourself enough time between squats to run with the 10 squats suggested, you can always switch to 5 squats.

Before you begin the workout map out your 1 mile run.  You can always do this on a treadmill or a loop around your home.  You’ll begin the workout with running.  When your timer goes off for minute 1, complete 10 air squats.  After completing the squats continue your run.  When the timer goes off for minute 2 complete 10 air squats.  Run again.  Continue this process until you have completed one full mile of running.

The Best White Chicken Chili

Since starting Stay Fit Mom back in January I’ve been waiting for Fall to share some of my favorite Fall time family recipes.  Last week I shared our traditional Halloween Meatball Soup Recipe and this week I’m sharing another, White Chicken Chili. I have given this family recipe a new name, The Best White Chicken Chili, because that’s exactly what it is- The Best!High protein, macro friendly, delicious white chili recipe! #stayfitmom #fallrecipe #easyrecipe #highprotein
I didn’t include the Greek yogurt in the recipe, but it’s a must!  Once you stir it in it makes it nice and creamy, and white!

The Best White Chicken Chili you have ever had! We make this multiple times every winter and is such an easy dish!

I’ve already altered this family recipe slightly to make it “skinnier”.  This recipe originally called for heavy whipping cream and sour cream.  I don’t know about you but those two things I usually try and avoid if possible.  When I lost the baby weight last time around one of my favorite substitutes for sour cream was Greek yogurt.  I honestly don’t notice a difference when used in recipes or mixed with a little salsa for Mexican inspired dishes. I made a double batch of this last Wednesday so I could photograph it for this post and take it to work for lunch.  Eating it for lunch and dinner it only lasted 2 days!  Friday evening when my husband was gone coaching football the kids and I went to the store for more chicken so we could make another double batch! Like I said, this is The Best White Chicken Chili.

By the time third trimester of pregnancy rolls around for me I’m having a harder time getting up and down off the ground, getting out of bed(for some reason I picture a beached whale…), walking, bending over, giving my kids a bath, stretching, exercising, and pretty much with EVERYTHING else.  Sometimes I think I forget that I’m pregnant and limited until I try doing certain things.  For example, at work a few weeks ago I had all my students do the Fitness Gram curl-up test.  Now imagine trying to explain to 1st and 2nd graders how to curl up with your arms at your sides and then reach out and touch a line.  Sounds easy enough, but they just weren’t getting it.  I thought, what the heck, I can probably demonstrate it.   I couldn’t even curl up an inch.  Silly me.  My point is, there are just some things(a lot of things actually) that you can’t do your third trimester of pregnancy wether you like it or not.  I fell in love with camping the moment we got to our campsite and the boys self entertained themselves for an entire weekend.  Being a mother of boys is exhausting.  We use the words, “NO,” “Don’t break that,” and “How did you manage this path of destruction,” about every 3 seconds when we’re at home.  When we camp those words get just a little bit of a hiatus.  I love that the boys can get as dirty as their little hearts desire.  I love seeing their imaginations run wild as they build secret hideouts, dig for treasure, and explore new adventures.  All of that happens, while I simultaneously soak up the beauty this world has to offer.  We go on hikes, we fish, we ride our bikes, and we RELAX!

We started where most campers start, with a “4-person tent” that was really only big enough for 2 people, and little to nothing in terms of camp essentials.  BUT the more we camp, the better we get!  Chris and I walk the campgrounds just about every trip to check out ideas from other campers, and over time we have learned to make our camp site a home away from home!

If you’re thinking glamping sounds overwhelming and over the top, I’m here to tell you it’s MUCH easier than you might imagine.  I got just about everything for our glamping experience from either our home or Walmart!

  1. The Rug:  Each time we go camping I always see families cuddled around the fire spread out over a large rug.  A rug can turn the average dirt camp site into your living room!  I love the homey feel I get and the kids LOVE to spread out over the rug with their toys.
  2. Twinkler Lights: Not only are twinklers beautiful, but for camping they’re extremely functional!  One of the things I love about camping is watching those stars light up during the night.  BUT it’s extremely dark, and lighting up the table for dinner really turns a dark night into a cozy dinner with your family!glampingwithkids
  3. Table Decor & Other Decorations:  I’m not talking about setting the table for a wedding by any means, but you will be shocked at how much a simple tablecloth can add to your glamping experience.  This time around we also brought some simple decorations I had lying around at home; left over pumpkins from Halloween, left over paper plates and napkins from our last birthday party, and a few candles.  The boys couldn’t wait to sit down for dinner!  We also picked up the adorable throw pillows with ‘I Love You’ and ‘Count Your Blessings’ pictured here at Walmart! 5 Tips to turn your camping experience into glamping! Just one more way to turn your camp site into a cozy home.
  1. Dinner and Dessert!  I’ve got good news for you, glamping doesn’t require a 5 course meal that takes hours of preparation.  In fact, we are fans of simple, easy, and convenient when we head out for another camp trip.  Freschetta® pizzas are great options for camping with a family!  My kids love that Freschetta® pizzas are topped with the most premium ingredients including sauce made from real tomatoes and 100% real cheese.  Freschetta® Naturally Rising pizzas are an excellent option that you also might want to try!5 Tips to turn your camping experience into glamping!

Making this dinner right over the grate on the camp fire is so simple and it’s ready in minutes!  At this point my husband is an expert at the perfect grill fire.  You don’t want the flames high above the fire pit, but smoldering (as shown below).  We placed the frozen Freschetta® pizza on a cookie sheet and covered it with another cookie sheet to trap the heat.  In just about 14 minutes the cheese was bubbling over and the crust was a perfect golden brown.

  • Additional Outdoor Grill Instructions (Instructions not on package)
    • For food safety and quality, cook to an internal temperature of 160ºF
    • Keep pizza frozen prior to grilling or baking
    • Do not eat pizza without grilling or cooking
    • Remove pizza from box, overwrap and cardboard

Double Unders, Air Squats, and Plank Workout

With the holiday season upon us, it seems like moms (like me) go into over drive.  I’ve got a list going each day that’s a mile long.  We’ve got sports three nights a week, and just getting dinner on the table  is a challenge!  This Double Under, Air Squat, and Plank Workout is a great workout to squeeze into that busy schedule!  It’s the perfect workout to do while traveling, and your whole family can join in the fun!

Weekly Workout:

4 Rounds

  • 60 Double Unders (or single skips)
  • 30 Air Squats

Equipment Needed:

  • Jump Rope
  • Yoga Mat(s) if desired.

Modification Options:

  • Be sure to modify this at home workout to your ability level.  You can always decrease the number of double unders or modify with single skips.  Don’t let the amount of repetitions intimidate you.  You can always reduce the reps if you’re a beginner!

Begin the workout with 60 double unders.  When you complete your jump ropes move on to 30 air squats.  Be sure your hip crease gets below your knee crease!  It’s always better to do fewer repetitions correctly than lots of repetitions without the right range of motion.  See video demonstration for further explanation.  After completing your squats, finish the round with a 30 second plank hold.  You will repeat these 3 movements (jump rope, air squat, plank hold) for four rounds.

Roasted Pepper & Tomato Sweet Potato Salad

I’m not sure if I’ve officially said it, but I plan on doing my second Whole 30 in January.  Obviously I don’t want to take on the challenge before then because of the bun in my oven but I have big plans for January 2016.  My last Whole 30 was a serious commitment that I didn’t quite know I was making.  Although I was extremely happy with my results and I learned a lot, it would have been helpful to have a few more Whole30 recipes on hand.

One thing I can say for sure is that my meals became very repetitive when I did my first Whole30.  This isn’t necessarily a bad thing because you find foods you like and you stick with them.  My go to food of choice when really watching what I eat has always been the sweet potato.  More often than not it means baked or steamed in the microwave with a side of broccoli or green beans.  Because I sometimes need a little more excitement in my life I have created a new recipe: Roasted Pepper and Tomato Sweet Potato Salad!
Whole 30 Compliant side dish for dinner this week!

I find this recipe exciting because you get to roast peppers on the stovetop (if you have a gas burning stove) and you can mix up the veggies in the dish however you’d like.  I’m kicking myself for using a yellow bell pepper instead of green (which would really have looked beautiful!) but I’m also all about using what I have in my fridge and not letting veggies go to waste.  So, if you are going to add this to your meal plan this week, I suggest buying a green bell pepper just to add more color.
Super Easy Whole 30 side dish

If you have never roasted a bell pepper on the stove top its really quite simple.  Place your bell pepper on the stove, turn it on, and roast away.  As it blackens keep turning it until you’ve roasted it all.  Set aside and let cool a few minutes before scraping away the skin with a knife. The rest is quite simple! Enjoy!

If you don’t have a gas stove top: Use your broiler.  Place it on a cookie sheet right under the flame and turn until all sides are blackened.Simple, healthy way to dress up some sweet potatoes!

Pancakes, Cookies, and Pizza; How the First Trimester of Pregnancy Wrecked My Diet.

So remember that one time Krista and I decided to create a health and fitness blog and write all about how food was the key to success?  Confession time… these last 13 weeks, I’ve felt like the biggest phony.  You know how some women get pregnant, start eating organic, processed free foods, and inhaling kale.  Let’s just say I am the EXACT opposite of that.  It is VERY clear to me that this baby is all about the carb life.  All will power has been lost.  Meat makes me want to vomit, and these days I’ve started counting spaghetti sauce as a vegetable.  Heaven help me.

I am the world’s WORST secret keeper.  Keeping things inside for longer than a nano second feels like the weight of the world is on my shoulders.  However, we had a solid plan to reveal the news of this new baby at the boys’ birthday party.  It is a sheer miracle that my mom and mother-in-law didn’t pick up on the news before then.  My parents have always been amazing at supporting our family’s healthy eating habits.  In fact, at one point during My Whole30 Journey my mother-in-law created an entire Whole30 meal for our family that was delicious.  At just about 9 weeks pregnant I lost my keys at Grandma’s house (pregnancy brain has been running rapid).  She says to me,

“Let’s retrace your steps.  I know we can find these keys.  You walked in and headed straight for the bread, then moved on to the cake, and then headed for the chocolate…”

It took me a full 48 hours to find the keys (which were in a bag that I had checked 3 times prior), but I laughed hard when my mother-in-law retraced my path of destruction.  This, my friends, has summarized the last 13 weeks of my pregnancy.

Here I am at 3 minutes pregnant feeling so unbelievably optimistic about my healthy, fit pregnancy.

And here I am at 13 weeks fantasizing about donuts.  And yet I’m still wondering why the baby has mysteriously taken up residence in the cellulite behind my legs and rolls in my back.

In all honesty, I am embracing every second of this pregnancy.  I joke about the cellulite behind my legs and my ever-expanding waist line, but none of that matters to me.  I have had pretty stressful pregnancies with both boys, and this time around I am delighted to take part in a little morning sickness and some outlandish cravings.

Pregnancy is fleeting.  Soon enough this baby will be here and every trip to the toilet bowl and stretch mark will all be more than worth it.  In the mean time, if you need to find me, I’ll probably be in the ice cream section at Smith’s.

Easy Paleo Meatball Soup

I look forward to my mother’s famous homemade meatball soup every Halloween.  It’s been the tradition in our family for as long as I can remember to get together on Halloween and eat meatball soup, homemade bread, and pass out candy to trick-or-treaters.  So, in honor of one of my favorite holidays coming up, I want to share with you this Easy Paleo Meatball Soup recipe. Paleo and Whole 30 Friendly Meatball SoupNow I must admit that I had never made this soup on my own before.   I’ve watched my mom make it for many years and ate plenty of bowls of it.   A few weeks ago I pulled out the family recipe book she gave me when I got married and looked at the recipe.   Not to knock my mom, but I was shocked by how simple it is.  All these years I was tricked into thinking she worked so hard on Halloween day to make a huge batch of this soup for all of us…Wrong.  It’s ridiculously easy that even Tracy could make this! Haha. (We all know she loves the kitchen)  Now my mother does also make some killer homemade bread to go with it so I’m not going to act like she doesn’t still work hard that day to cook us all great meal. 
My favorite paleo soup to date! This is so simple, and is even compliant with Whole30.

I was a very picky eater growing up.  I loved this soup, but I was repulsed by all the big onion and tomato chunks in it.  So, my mom would just give me a bowl of meatballs and broth and I was perfectly happy.  It’s funny how our palates change with age because I can’t get enough of the savory onions and tomatoes in this soup now. Super simple meatball soup for a fall weeknight meal. As you can see I have stepped up my food photography game.  I recently purchased a new camera and this is my first attempt using it.  Now I’m sure they will only improve but considering I had no idea what I was really doing and just went for it I think they turned out pretty fantastic! Now on to this simple recipe.  This recipe was not originally gluten free and paleo friendly but it only took a couple modifications to do so.

Easy Paleo Meatball Soup

Ingredients

  • For the Soup: 
  • 64 oz. beef broth
  • 2 28oz. cans whole peeled tomatoes
  • 3 large onions sliced
  • 1 1/2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 1/2 teaspoons chili powder
  • For the Meatballs:
  • 1 lb. ground beef
  • 1lb. sausage
  • 1/2 cup almond flour
  • 2 eggs
  • 2 tablespoons minced onion
  • 1 1/2 teaspoons chili powder
  • 1 teaspoon salt

Instructions

  1. Combine all ingredients for the soup and place in a large soup pot on medium heat.I love how simple this Paleo Meatball Soup looks! I've got to put it on the menu this Fall!
  2. In a mixing bowl combine all ingredients for meatballs.
  3. Roll meatball mixture into balls and cook in a frying pan that has about 2 1/2 inches of water in it.
  4. Let meatballs cook for about 5 mins before removing and add to the soup mixture.
  5. Once all meatballs have been precooked and added to soup pot let the soup simmer for several hours to finish cooking the meatballs.Delicious, healthy meatball soup perfect for Fall weather!

If you’re currently doing a Whole 30 you will have a hard time finding a beef broth that is compliant.  I looked at 2 grocery stores and didn’t see any that were sugar free or yeast free.  My suggests are:
1. You just use a chicken broth. I know Costco has a Whole 30 compliant broth and probably your typical grocery store does as well.
2. You make your own broth. I’ve never made my own beef broth but found this info here from nomnompaleo.com.
3. Order some here. It’s not cheap, but it was the only place I could find it online.

Easy Lego Birthday Party

My two boys turned three and five this year!  I have no idea how that happened!  One day I was holding my oldest in the NICU and the next thing I knew he turned 5.  This summer we spent 4 days at Lego Land, California and our boys loved every minute.  I wasn’t surprised even one bit, when they said they wanted a Lego birthday party, in fact I was relieved!  I’ve said this before, I DON’T craft.  Legos however, I can do!  Rectangle and circle decorations are right up my alley!  I’m all about those basic shapes for keeping things easy!

If your kids want a Lego birthday party this year I’ve got a few EASY decorations, party favors, and games, that will help you throw your party together in no time!

  • Lego Banner:  My 5-year-old even helped with this one!  We cut about 12 rectangles, and 6 circles for each rectangle.  I did use a 2 inch Circle Punch to help get those circles done quickly.
  • Balloons:  We went VERY simple this year with yellow balloons!  If you really want to take things up a notch you can decorate simple Lego faces on the balloons.  We ran out of time, so I skipped that step!
  • Lego Cake:  It really doesn’t get any more basic than this.  We used 2 different sized cake pans, a large cake pan for the bottom sheet and a square cake pan for the Legos on top.  Then we used mini marshmallows for the circles on top.  Some food coloring and frosting and you’re set!Simple, EASY Lego birthday party!   • Legos!  You’ll be surprised how easy it is to decorate with actual Legos.  We decorated the table with Lego Mega Blocks.  We also set up Lego stations for the kids to play at.  The Mega Blocks were a huge hit with the toddlers and babies.

  • Pin the Head on the Lego Guy:  I had my husband draw a SIMPLE shaped Lego body on poster board, and then we gave each kid a small square plate with a simple face drawn on it.Simple, EASY Lego birthday party!     • Decorate and Dress Your Lego Guy:  This was great for the crafters at the party.  I traced and cut out a basic Lego shape figure and t-shirts for clothing.  Then we used stickers we had hanging around and we got some wiggle eyes!Simple, EASY Lego birthday party!     • Lego Cup Race:  This was the final game and proved to be the best.  Simple, EASY Lego birthday party! Towards the very end of the party (after everybody sang the birthday song to the boys) we had a special surprise for the boys and our friends and family!

I was so focused on the grandparents that we almost forgot to tell the boys what was happening.  Chris leaned over and told Siege (our oldest) that there was a baby in mommy’s tummy.  He was thrilled!
