I’ll be totally honest, I don’t usually make these. Why? Because I’m a HUGE G2G Protein Bar fan so I just buy those. Worth every penny in my opinion and their macros are really hard to beat. I did a copycat version of one of my favorite flavors, Peanut Butter Coconut Chocolate. If you don’t love coconut, leave it out and your macros won’t hardly change. Don’t love peanut butter? Use almond butter, no big deal. These are so easy to manipulate to suit your needs and preferences!

Make sure you choose a good tasting protein powder to make these. If you don’t love the taste of your protein, you won’t love the taste of these bites. I highly recommend Clean Simple Eats vanilla or snickerdoodle whey protein for this recipe. Chocolate Chip Coconut Protein Bites

Ingredients
  

  • 4 cups old fashion oats
  • 3 scoops vanilla whey I like to use Clean Simple Eats Vanilla or Snickerdoodle
  • 1/2 cup peanut butter 128g
  • 1/2 cup skim milk
  • 4 tablespoons honey 84g
  • 2 teaspoons vanilla extract optional
  • 6 tablespoons sweetened coconut flakes 45g
  • 4 tablespoons mini milk chocolate chips 60g

Instructions
 

  • Blend 2.5 cups of the oats in a blender and then put in a medium size mixing bowl.
  • Add in all remaining ingredients and stir well.
  • The dough should resemble cookie dough. If it’s too sticky add additional oats or oat flour. (This won’t change your macros much because it will make additional bites)
  • Roll into 40g balls and place in the freezer for 30 minutes.
  • Once firm you can layer them in an airtight container and they won’t stick together.Keep in your fridge up to 6 days.

    Hi! I am baffled by this recipe. I have attempted twice. The second time I added more peanut butter and almond milk because it was so dry and wouldn’t come together. It is so many oats. Should it really be 4 1/2 cups total?

    Can you use Oat Flour for all the oats? Instead of blending the oats?

    Mine came together nicely with 4 1/2 cups of oatmeal. Maybe I would try 4 1/4 next time, that would be perfect!
