It really doesn’t get any easier than this, people. You know I don’t do complicated and the kitchen has been a scary place for me in the past. Anytime I can simplify a recipe, I will and this is just as simple as it is delicious.
My LOVE for tomatillos is rooted in that amazing Cafe Rio house dressing. Anybody with me on this one? When I started my Whole30, one of the things I knew I would miss most was good ol’ Cafe Rio pork salads with that delicious tomatillo dressing. I just knew I wouldn’t make it the full 30 days without some form of tomatillo in my life, so I threw this together and it was a HIT with the WHOLE family. I’m not going to lie, a lot of times my sweet husband’s review of our dinner sounds a lot like… “This tastes….healthy.” Which turns into, “Maybe I’ll just order the boys and me pizza?”
Not with this recipe! Anytime my 4-year-old asks for seconds and my hubby asks to put it on the weekly menu, I know it’s passed the test.

For this recipe all you need is 4 pork chops, 3-4 tomatillos, 3 garlic cloves, 1/2 an onion, 1/2 a jalapeño, and some salt. I started by placing all 4 pork chops into the skillet. While that was cooking I used my Vitamix to blend together the tomatillos, garlic, onion, jalapeño, and salt. I poured the mixture into the skillet, simmered, and served it up! - 4 Pork Chops
- 3-4 Tomatillos
- 3 Garlic Cloves
- 1/2 Onion
- 1/2 Jalapeno
- Salt to taste
- In a skillet, begin to cook 4 pork chops.
- While pork chops are cooking, blend tomatillos, garlic, onion, jalapeño and salt.
- Pour mixture in skillet onto the pork chops.
- Simmer until cooked all the way through.
- Serve over Cauliflower Rice. Enjoy!
