Sweet Potato Apple Bake

When I’m in the mood for something sweet, I love throwing together this quick and easy Sweet Potato Apple Bake!  It not only makes for a great dessert, but it goes wonderful as a breakfast side the next morning.  Satisfying my sweet tooth craving with a healthier option!

In our I Can’t Afford To Get Fit post we mention buying food in bulk at Sam’s Club or Costco.  My kids usually fly through apples, but if I see that we’ve got a few leftover apples that look soft, I always consider baking them.

This best part about this recipe is that you most likely own all the ingredients!  If you don’t have Ghee {and you’re not worried about Whole30 compliance}, feel free to substitute butter!  I haven’t tried it with coconut oil, but I’m sure that would work great too!

Sweet Potato Apple Bake

Ingredients
  

  • 3 Small Sweet Potatoes peeled
  • 4 Apples
  • 3 Carrots peeled {optional}
  • 1.5 Tablespoons Ghee {can substitute butter}
  • 1.5 Teaspoons Cinnamon

Instructions
 

  • Peel & slice the sweet potatoes, carrots, and apples.
  • In a 9 X 13 baking dish, coat the veggies and apples with Ghee and sprinkle with Cinnamon.
  • Bake at 350 degrees for 35 minutes.
