Cashew Alfredo Sauce {Dairy Free + Paleo + Whole30 Compliant}

I knew when I started Whole30 this month I would be inspired to come up with some new compliant recipes.  You guys, this Cashew Alfredo Sauce is awesome!!  You won’t feel deprived of anything when you pour this over some zoodles or spaghetti squash for dinner.  Tracy came over last week and tested this out.  She loved it too!How to make creamy, dairy free, Alfredo Sauce. If you have been planning your weekly meals do yourself a favor and put this on next weeks menu.  This cashew alfredo sauce is really simple to make and just requires a little preparation (remembering to soak the cashews).  I soaked my cashews for 6 hours the day of but you can let them soak all night if that is easier.

I have surprised myself with how easy going this round of Whole30 has been.  It’s day 15 and I feel pretty amazing. One of the things I was most looking forward to was biting into an apple and enjoying it like it were dessert.  I had one tonight while watching Making a Murderer and that feeling has returned!  It’s amazing how cutting out sugar can really liven up your taste buds. As far as the ease with Whole30, I think having experience doing one before and just knowing what foods I like has made all the difference.

I can’t wait to get to day 30 and I’m already thinking about trying to make it a Whole60…COULD I do it!? It seems like a reach but I thought I would never make it 30 days my first time around and somehow I did.  I think I’ll wait and see how I feel come day 30 and wether or not I need some paleo treats.  I pulled out my beach wearing shorts yesterday and they are VERY snug.  We are going to go beach camping in 8 weeks for Spring break and I need them to fit! I could do it right? Anyone want to join me?

Cashew Alfredo Sauce {Dairy Free + Paleo + Whole30 Compliant}

 Ingredients

  • 2 cups raw cashews 
  • 1.5-2 cups almond milk
  • 2 teaspoons fresh squeezed lemon juice
  • 1 head of garlic (8-10 cloves)
  • 1/4 cup chopped onions
  • 2 teaspoons olive oil
  • 1 tablespoon ghee
  • 1 teaspoon sea salt
  • 1/4 teaspoon pepper

Instructions

  1. Soak cashews in water at least 6 hours or overnight.
  2. Cut off the top of garlic, coat with about 1 teaspoon olive oil, wrap in aluminum foil and bake at 350 for 40 minutes.
  3. Saute onions in 1 teaspoon of olive oil until onions become translucent.
  4. Place all ingredients in food processor or high speed blender. (just squeeze the roasted garlic cloves out right into the blender)
  5. Blend until creamy. If needed, add more almond milk. (I always start with 1.5 cups and add more as needed)
  6. Enjoy over your favorite zoodles or use as a dipping sauce for chicken. MMMmmm.

    Thanks for sharing! I am also doing Whole30 this month, but totally counting down the days until bread, yogurt and oatmeal come back into my life. I would be super impressed with a Whole60!! One thing I have been loving from the past few weeks, is getting over my after dinner snack habit – no more mindless eating!

      Hi Erin, glad to hear you’re also doing a whoke30 this month! I always have a snack after dinner when my kids go to bed. It’s a must for me. I usually do apple slices and almond butter(sharing that recipe tomorrow!) but I’ve never tried sprinkling cinnamon on them. That sounds great! I will do that tonight!!

    Thank you for sharing your recipe. I have a son with a dairy allergy, so I am anxious to try this. I bought a store jar of vegan Alfredo sauce and he wasn’t really thrilled with it. It had a tangy after taste that he didn’t like. I’m hoping I have better luck with this one. I featured your recipe in my Saturday Morning Coffee Cafe post this week!

      Hi Marissa! I don’t keep mine in the fridge longer than 5 days but it does freeze well! I keep small bags (about 2 servings) in freezer bags and pull them out when needed. Glad you like it!

      Ghee is clarified butter, meaning the water and milk solids have been filtered out, leaving just the fat.

    We just made this and it was too sweet
    The almond milk we used was plain and had zero sugar. I am thinking the cashews could be sweet. We tried more garlic and more lemon but to no avail.
    I am an excellent cook for 40 years and
    Cook whole 60 – Paleo and vegan. We are doing whole 30 now and really wanted this to work. Bummed. Any suggestions ?

      I think I may be stumped on this one, that’s really strange it turned out so sweet. I wish I had an answer for you but I really don’t know how that could have happened either.

    Would eliminating the ghee make a huge difference in the taste?

      Hi Anne! I don’t suggest eliminating the ghee, I think you would lose a lot of good flavor.
